We draw on the experience of our masters to select and refine the world's finest caviars from the source. Our artisanal know-how allows the caviar's fresh buttery and nutty notes to be fully expressed. Delicately salted in a "malossol" style, the crunchy eggs reveal unequalled flavor and length in the mouth.

Wild Persian caviar has always been considered the best caviar in the world. On the one hand, its secret lay in an innovative, eco-responsible fishing method and, on the other, in the unique know-how of its master refiners. Wild caviar is now banned. But Persian farmed caviar, which replaces it, benefits fully from this ancestral know-how, and still ranks among the world's best.

The uniqueness of caviar is based on 2 elements:

The sale of wild caviar has been totally banned since 2008 by CITES. Farming conditions are all the more demanding in terms of water quality and temperature, as well as fish feed.

Maison Alexis Lepers meticulously selects and refines caviar grains with its partner producers, to master the flavors of each one. Maison Alexis caviars are selected for their richness of flavor and their persistence in the mouth, to satisfy the most demanding connoisseurs. Our Canadian caviar producer raises a rare species: the shortnose sturgeon.
