Savouring caviar
What is the correct tasting method?
Before tasting, crush some ice and put it in a container or a caviar set. Arrange spoons (horn, mother-of-pearl or even plastic, no metal or stainless steel spoons) in a circle for example, planted in the ice.
It is not necessary to open the box in advance, on the contrary, the opening is part of the surprise in front of your guests.
When tasting, open the box with a coin, a spoon or any other object that can pivot between the lid and the box.
Place your box of caviar in the center of your crushed ice. Enjoy it in its simplest form, or on blinis lined with crème fraîche, for a perfect balance of flavors. As an accompaniment, a glass of champagne, or for the most courageous, a shot of chilled vodka will do the trick.
The first taste sensations appear after the second spoonful. Indeed, the first spoonful “opens” your taste buds, and the pleasure is at its peak from the second spoonful.
Roll the caviar grains on your tongue, let them melt under your palate, rediscover the flavors of butter, hazelnut or oyster. Note the persistence in the mouth.
