An exceptional dish, caviar is best eaten with a mother-of-pearl or wooden spoon, in small quantities, letting the grains burst against your palate.

You can serve it with warm toasted bread, a blini, or simply plain, to fully appreciate its flavors.

Caviar is increasingly used in cooking to enhance flavors.

White vodka is the traditional Russian accompaniment, but caviar goes very well with dry champagne, wine (such as Muscadet, Chablis, Sancerre, Riesling...) and even tea.
