La recette
Ingredients for 4 people:
- 400 g of salmon fillet
- 1 egg
- 6g of mustard
- 3cl of anglaise sauce
- 2 lawyers
- 1 bunch of Thai spring onions
- 2 limes
- 1 Granny Smith apple
- 10 cl of olive oil
- A few flat-leaf parsley leaves
- A few dill leaves
- 10g of capers
- 40g of caviar (we recommend Amur Royal Gold )
- Fine salt and pepper mill

Étape 1
• Cut half of the apple into small cubes and the other half into sticks.

• Cut the salmon into small cubes, in a salad bowl mix the chopped spring onion, parsley and some of the dill, the salmon cubes, the egg yolk, the mustard, the English sauce, the zest of a lime and its juice, the chopped capers, 5cl of olive oil, the Granny Smith apple cubes and season with salt and pepper from the mill.

• Mash the avocado flesh with a fork, add the remaining 5cl of olive oil, the zest of a lime and its juice, season with salt and pepper from the mill.

• Using a round cookie cutter, layer avocado and salmon tartare, add the caviar 10 to 12 g per person, decorate with apple sticks and a few sprigs of dill.
