Ingredients for 2 people:
- 5 organic eggs
- 1 bunch of chives
- Salt, pepper
- 1 teaspoon of strong mustard and saffron
- 1 tablespoon of vinegar
- 15 cl of rapeseed oil

Étape 1
Hard boil 4 eggs.

• Make mayonnaise: separate the yolk from the white of an egg, put the yolk in a bowl, season with salt and pepper, add the “strong and saffron” mustard and the vinegar.
• Whisk the mixture and gradually pour in the oil while stirring until the mayonnaise is very firm. -

• Cut the hard-boiled eggs in half and remove the yolks without breaking the whites.

• Pass the yolks through a sieve, mix the sieved yolks with the mayonnaise, taking care to keep a tablespoon of sieved yolks for finishing.

• Chop the chives and mix with the mayonnaise, keeping a teaspoonful for finishing.

• Put the mayonnaise in a piping bag, the nozzle should be fluted and garnish the inside of the egg whites with this mayonnaise.

• Finally, sprinkle with the remaining yolks and chives.
