Organic salmon fillet, Nordic gravlax style, spiced cucumber

Ingredients for 4 people:

- 400 g of organic salmon fillet
- 150 g of Nordic gravlax mix
- Salt, pepper from the mill
- 1 teaspoon of raw vegetable spice (Coriander/sumac/ginger/basil/red Kampot pepper/saffron)
- 2 yellow lemons
- 1 spring onion
- 1 cucumber
- 10g of coarse salt
- Sprig of dill
- Sprig of chives
- 2 tablespoons of olive oil

  • Étape 1

    • Pour half of the “Nordic” gravlax mixture into a dish, place the salmon fillet on top and pour the rest of the gravlax mixture on top, set the salmon fillet aside to marinate in a cool place for 12 hours.

  • Étape 2

    • Wash and peel the cucumber at regular intervals. Cut it in half lengthwise and remove the seeds from the cucumber using a tablespoon.

  • Étape 3

    • Slice the cucumber and soak the pieces in coarse salt for 30 minutes, then rinse and drain them.

  • Étape 4

    • Chop the spring onion, chives, dill and mix everything with the cucumbers. Add the zest and juice of a lemon.

    • Season the cucumbers with salt, ground pepper, A4 spice blend, add the olive oil.

  • Étape 6

    • Remove the skin from the salmon with a knife, trim the dark pieces of flesh. Cut the salmon into thin slices.

  • Étape 7

    • Peel a yellow lemon and cut small cubes from the lemon quarters.

  • Étape 8

    • Arrange the salmon, cucumber, a dash of olive oil, a few lemon cubes and a sprig of dill harmoniously.
