Organic salmon fillet gravlax style with smoked tea, spicy avocado

Ingredients for 4 people:

- 400 g of organic salmon fillet
- 150 g of gravlax mix
- 2 limes
- 2 lawyers
- Sprig of chives
- Sprig of dill
- Salt, pepper from the mill
- 1 teaspoon of Guacamole spice ( Coriander, Chili, Hot Paprika, Anise, Cumin, Khorasan Saffron)

  • Étape 1

    • Pour half of the gravlax mixture into a dish, place the salmon fillet on top and pour the rest of the mixture on top, leave the salmon fillet to marinate in a cool place for 12 hours.

  • Étape 2

    • Take the avocados, cut them in half, remove the stone and peel them. Brush them with lemon juice to prevent them from turning black.

  • Étape 3

    • Finely slice the avocados and brush again with lemon juice, sprinkle with spice A10 2, salt, pepper and zest the lime on top.

  • Étape 4

    • Remove the skin from the salmon with a knife, trim the dark pieces of flesh. Cut the salmon into 0.5 cm thick strips.

  • Étape 5

    • Arrange 3 slices of salmon on a plate, place half an avocado, drizzle with olive oil, a few sprigs of chives and a sprig of dill to finish.
